Shane Mundy has been in the meat business for more than 27 years. He bought his own business the day he finished his apprenticeship.

Today, his Hill Street Gourmet Meats retail outlet is counted among the finest meat stores in Australia. The shop has expanded through the years to now include 2 cool rooms, a prep area including hanging, a smallgoods room, a well-equipped stainless steel kitchen, and a smokehouse.

The shop has become well known for stocking Tasmanian grown free-range meat and poultry. This translates into quality and superior flavour.

A butcher must keep in touch with customers’ needs. We glean ideas from their questions.

There are qualified butchers in the store seven days a week. Shane and his team of four skilled butchers work hard to ensure that there are no gaps in the display cabinet. This means customers can feel assured that they’ll find what they want when they walk through the door. Two additional sales assistants help to serve customers on weekends.

    Shane learned his trade from his father, in Hobart, and he bought his own butchery when he finished his apprenticeship more than 27 yeas ago. Shane is passionate about meat. He owns six barbecues!

    Shane is married to Allison and has 3 children, aged 7, 13 and 14.

    Greg says that being a butcher is “in my blood”. He has been at the trade for 41 years, always in Hobart, and he learned from his father who was a butcher for more than 50 years.

    Greg has 4 children and 3 grandchildren. He also loves woodworking and golf.

    Tasmanian born and bred, John has been working as a butcher in gourmet butchers shops for more than fourteen years, and had his own shop in Brighton for a time.

    He is the proud father of 8-year old twin girls.

  • Julie TempleJulie

    Julie is to be found on the front counter at Hill Street Gourmet Meats. She has worked in the meat industry for more than 20 years. “The shop has a great atmosphere,” she says. “It is always clean and fresh.”

    Julie has 2 children.
