Chicken has become one of Australia’s favourite foods because it is wholesome, versatile and easy to prepare. White meat chicken is one of the lowest fat protein sources, and leg meat, while a little higher in fat, adds rich flavour to any meal.
At Hill Street Gourmet Meats, our chickens are locally grown by Nichols. All Nichols chicken is now free range and their Christmas turkeys are also free range. All Nichols poultry is produced without the use of growth hormones or antibiotics.

Chicken Kiev with Spinach and Brie
All our kievs are made from Nichols chicken breast (skin off) with a tasty filling. Simply bake in the oven at 180°C for about 35 minutes. Serve with a simple salad for a quick and easy mid-week meal.
CHICKEN
- Whole roasting chickens:
Roast chicken is incredibly versatile. The range of possible stuffings and basting ingredients is limited only by your imagination.
Our whole fresh chickens are meaty and flavoursome.
- Boned, rolled and seasoned chickens:
A popular Christmas option. Seasonings are either traditional, ham and cranberry, or fruit (or supply your own if you wish).
- Breast fillets:
Low in fat and quick and easy to prepare, breast fillets are one of the most popular chicken cuts. Skin on or skin off. Add extra flavour with marinades and sauces. Also great as a satisfying addition to a salad.
- Thigh fillets:
A little more fat and flavour than breast meat.
- Chicken Marylands:
A meaty, quick-cooking combination of breast and thigh meat.
- Wings and drumsticks:
Great for an economical barbecue option.
- Chicken mince:
Ideal for pies, pasties, meatballs and burgers.
- Smoked whole chicken and smoked chicken fillet:
These are all smoked on-site without the addition of chemicals. Taste the difference.
- Chef-prepared range:
Boccochini wings – plain or honey-soy.
Chicken schnitzels
Kiev – Classic (garlic butter); Mediterranean (olives, fetta, sundried tomato); Mushroom, bacon and cheese; Spinach and Brie; or Seafood (prawns and garlic butter).
TURKEY
- Whole roasting turkeys:
A traditional Christmas favourite. Our whole fresh turkeys are produced locally by Nichols and are available all year round (pre-order).
- Tiny turkeys:
These are 2-3kg in size (about the size of a large chicken.)
- Turkey Breast Roast (Buffe):
All white breast meat.
- Boned, rolled and seasoned turkeys:
Prepared by us to make your life easier. Seasonings are either traditional, ham and cranberry, or fruit (or supply your own if you wish). All meat. Easy to carve and serve.
DUCK
- Whole ducks:
A popular Christmas option and also available throughout the year.
QUAIL
- Whole quail (pack of nine):
A special gourmet treat, our packs of whole fresh quail are appreciated by those who love to entertain at home.
